Hungry Girl: Egg Rolls

I love Egg Rolls, so I am in on this one....Cant wait to stand on the scale tommorrow to see how much I have lost on my first week.....My goal is at least 2 pounds a week...lets see what happens....Manana  <S> Keeping fingers crossed!!



 
Fully Loaded Egg Rolls
PER SERVING (1/8th of recipe, 1 egg roll): 109 calories, 1.5g fat, 380mg sodium, 15g carbs, 1g fiber, 2g sugars, 9g protein -- PointsPlus® value 3* 

We loaded up our baked egg rolls with meaty goodies and MORE. These need to be tasted to be believed...

Ingredients:
2 1/2 tbsp. reduced-sodium/lite soy sauce
1/2 tsp. sugar (or granulated no-calorie sweetener)
4 oz. raw boneless pork tenderloin, finely chopped
3 cups dry coleslaw mix
One 6-oz. can (4 oz. drained) tiny shrimp, drained
1/4 cup chopped bean sprouts
2 scallions, chopped
1 stalk celery, thinly sliced widthwise
2 tsp. crushed garlic
1 tsp. sesame oil
1/2 tsp. ground ginger
1/8 tsp. black pepper
8 large square egg roll wrappers (stocked with the refrigerated Asian items in the supermarket)
Optional dip: sweet & sour sauce
 
 
Directions:
Preheat oven to 375 degrees. Spray a large baking sheet with nonstick spray.

In a small bowl, mix 1/2 tablespoon soy sauce with sugar. Add pork and coat well. Cover and marinate in the fridge for 10 minutes.

Bring a skillet sprayed with nonstick spray to medium-high heat on the stove. Add coleslaw mix, pork, and any excess marinade. Cook and stir for 3 - 5 minutes, until pork is cooked through. Transfer to a large bowl.

Add remaining 2 tablespoons soy sauce to the bowl. Add all other remaining ingredients except wrappers and optional dip. Mix well. For added flavor intensity, cover and refrigerate for 20 minutes (optional).

Lay an egg roll wrapper flat on a dry surface. Evenly distribute 1/8th of slaw mixture (about 1/3 cup) in a row a little below the center of the wrapper. Moisten all four edges by dabbing your fingers in water and going over the edges smoothly. Fold the sides about 3/4 inch toward the middle, to keep mixture from falling out. Roll the wrapper up around the mixture and continue to the top.

Seal with a dab of water. Place on the baking sheet, and repeat with remaining wrappers.

Spray egg rolls with nonstick spray. Bake in the oven until golden brown, 25 - 30 minutes.

If you like, slice in half and dunk in sweet & sour sauce!

Exercising a little at a time

Ok baby steps, I am not going to weigh myself til fridays, trying to workout at least 15 mins a day to start out. I am also cutting out what I eat, and eating every two hours just a little bit at a time...Lets see how this comes out...

Woman's Journey to a Stunning 500 Pound Weight Loss

To say Melissa Morris led a normal life would be far from the truth.
Weighing in at nearly 700 pounds, her life was anything but normal.
"I didn't get up to make myself food.  Somebody always brought me something," Morris said today on "Good Morning America."  "I didn't get up and cook.  Somebody brought it to me."
Morris, 37, had been overweight her whole life, but her weight began to creep up the scale after she met and married her husband, Chris, and the couple moved to rural Livingston, Texas in 2002, away from family and friends.
It took a bout of cancer faced by her mother to make Morris realize she needed a drastic change.
"My mom was sick with cancer and we went to Ohio to be with her," Morris told "GMA."  "We went home [from the hospital] and my mom was sitting in her chair and she still had her bandages from her surgery and she looked up at me sitting in my chair and she said, 'Can I get up and make you something to eat?'"
"I thought my mom is sick with cancer, my mom could die and she's worried about whether or not she can get up to make me something to eat?," Morris said.  "I was done.  I was done."
In a desperate attempt to lose weight, Morris found a doctor who was willing to perform gastric bypass surgery.
On the day of the surgery, in January 2006, Morris wore a skirt that had been handmade using four yards, or 12 feet, of material in order to fit her body.
"It was tight," she said of the skirt.  "It fit tight."
The surgery was a success and, one year later, she had lost more than 250 pounds.
Not having driven for over a decade, she passed her driver's license test and gained newfound independence.
Four years after her surgery, she had lost more than 400 pounds and was hired by the clinic that performed her own gastric bypass surgery to consult with new patients.
"Everyday I look in the mirror I still see the 673 pound lady," Morris said, of transitioning to her new appearance.  "I don't recognize the body that I have, but the face is still mine."
While her health improved, Morris's dramatic weight loss placed strains on her family life, particularly with her husband, Chris.
"It's been hard," she said.  "He's a caretaker, he's always been a caretaker.  He was so used to doing everything for me.  I let him but, as I got skinny, I was like, 'I don't what you do that, I can do that.'"
"We are defining our relationship," Morris said.
Morris's weight loss and improved health did allow the couple to realize another dream, having a child.  Their daughter, Allona, will turn two in May.
"She's the great part," Morris said.  "She's worth everything. She's what I live for."
Morris's weight loss story is documented in the show “My 600 Pound Life,” premiering at 9 p.m., Wednesday, Feb. 1, on TLC.

Off to a good start....work out!!

Ok, its day one, it hasnt been too bad, got up and went for a walk this morning. Came home and had a little omelet, with spinach, tomatoes and feta, and started my day. After work I tried to stay busy around the house. All I can think about is keep moving, keep moving down sit down. ( thinking about the biggest loser, keep moving, keep moving)  I think I can I think I can...

And So it begins....My weight loss journey

Ok, here I sit, already the second month of this New Year and the excitement of  my resolution to lose weight once again is starting to slip a way. But this year, is my year where I am turning 40 and I am wanting to change my weight. So I decided to journal my new journey from the beginning, as it begins.
As I sit here, all 215 pounds of me, I am ready to change how I look and I how feel. Tommorrow is Monday and it begins...My new weight loss journey....So, here we go.......................
